Quick Tomato Soup
I was out late with the kids today and everyone was hungry, when we returned home to a rather empty fridge. So quick trip to the pantry and we had a tasty soup in 20 minutes:
- 1 /2 onion, chopped
- 1 can crushed tomatoes
- 1 can white beans
- 2 cups/5 dl water
- 1 tsp oregano
- 2 tbsp cream
- Bouillon to taste
- Fry chopped onion in olive oil a few minutes.
- Add the rest of the ingredients and simmer for 15 min.
- Blend with handheld blender.
- Season and serve with bread.
Suggestions
Use different herbs or spices. Add any vegetables. Use chicken broth instead of bouillon. Add small pasta after blending the soup. Top with sour cream instead of adding cream.

Used all the white beans .. and voila, soup for two days, and tasted great 🙂 but thanks for all the god ideeas, you are a very creative girl, the young ones must enjoy all the lovely food creations.

It will definitely work for a tomato soup. So keep the can and use it for next time tomato soup is on the menu or make a nice chili con carne, where it will be perfect. Now that you’ve boiled the white beans, fresh is always better and I hope you enjoyed the soup! If you boiled too many beans, you can always throw some in a salad or in other soups. Your son will probably also like the sneaky scones, which are full of white beans.
