Omelette With Goat Cheese

Long day at work. I was tired, the fridge was almost empty, yet magic happened in the kitchen. This simple omelette with only a handful of ingredients turned out so good that it deserves to be featured on the blog.

  • 8 eggs
  • 1/3 cup / 80 ml milk
  • 1 pack of bacon bites
  • 4 green onions, chopped
  • 2/3 roll of goat cheese
  • Salt & pepper to taste
  1. Preheat the oven to 375F/175C.
  2. Fry the bacon in a large skillet.
  3. Whisk the eggs with milk, salt & pepper.
  4. Pour the egg mixture over the bacon and add the chopped green onions.
  5. Gently stir to disperse the bacon and green onions evenly.
  6. Slice the goat cheese and top the omelette.
  7. Bake in the oven until the center has set completely. The time will vary depending on the size of the eggs and the skillet you use –  approximately 5-10 minutes.
