Cauliflower Soup With Avocado Topping

Once in a while I like to treat our bodies to a light meal. This mellow soup does the trick. It’s light, super good for you and has very well balanced mild flavors.

Soup

  • 1 cauliflower
  • 1 quart / 1 liter chicken broth
  • 2 bay leaves
  • 1/3 cup / 80 ml cream
  • juice from 1/2 lemon
  1. Cut cauliflower into pieces and put in a pot with the broth and bring to a boil.
  2. Add bay leaves and simmer over medium until tender app 15 min.
  3. Remove bay leaves and blend the soup.
  4. Add cream, lemon juice and season with salt and pepper.
  5. Serve with topping and good bread.  

Topping

  • 2 avocadoes
  • juice from 1/2 lemon
  • 2 tbsp sour cream
  • 1-2 tbsp chopped dill
  1. Mix the avocado cream well, season with salt and peber and add dill last.

Suggestions

Substitute half or all of the cauliflower with broccoli. Try another herb. Add bacon bits, if you need meat to complete your meal. Also good as an appetizer.

  1. I just made this delicious cauliflowersoup for the second time this month. I served it with shrimps, small spinach leaves and sour cream on the top. I also use the soup (only ½ liter broth) as sauce to a dish with white fish.

    Chikenbroth – quart el 1 liter? Er det kyllingefond og hvor meget?
