Citrus Marinated Chicken Tenders

This is such a summery way to serve chicken and the best part is that the marinade doubles as salad dressing. Just remember to discard the used marinade and set aside the dressing before marinating the chicken. This is pretty important stuff. The recipe below makes enough marinade for about 1 pound of chicken tenders and a side of salad. Got to love 2-in-1 solutions when it comes to quick dinners. Marinate the chicken for 1-2 hours. Season the chicken just before you are ready to cook it, salt in marinades can leach out moisture, drying and toughening the chicken. I put the chicken tenders on metal skewers, you can also use wooden skewers, just remember to soak them well first. In fact you don’t have to use any skewers, you can simply throw the chicken tenders right on the grill , if you prefer that.

Citrus dressing and marinade

  • 1/4 cup / 60 ml olive oil
  • 1/4 cup / 60 ml orange juice (about 1 orange)
  • 2 tbsp rice vinegar (or other white vinegar)
  • 1 tsp mustard
  • 1 tsp lemon zest (about 1/2 lemon)
  • 1 tsp honey
  1. Whisk the ingredients together. Marinades are not complicated business.
