Best Miso Dressing Ever
I absolutely love this dressing. I can’t praise it enough and miso is even supposed to have great health benefits. I have made this dressing many times with different greens. Today I dressed a quick red cabbage salad with grilled chicken and cucumber. You don’t have to make the same, though it was a tasty lunch. The dressing is the star here and it can do wonders on pretty much any basic or fancy salad. Do yourself a favor and give it a try. I bought the yellow miso in the refrigerated section of Wholefoods, but I imagine most Asian specialty stores will carry miso as well. Just be sure you get the yellow kind, because the red miso is too overpowering.
- 6 tbsp olive oil
- 2 tbso yellow miso
- 2 tsbp lemon juice
- 2 tbsp water
- 1 small shallot, chopped
- Salt to taste
- Simply blend the ingredients with a handheld blender and pour it over your favorite salad. I’m telling you, it’s your happy day!
