Green pea lemon hummus
My son is not a big fan of meat, chicken, fish nor cheese. So I have to be crative and come up with ways to get some protein in his growing body. That is how this hummus recipe was created. Since this was for my 2 year old, I chose to omit garlic, but feel free to add as many cloves as you can handle. Special equipment: food processor
- 1 can of garbanzo beans
- 1/2 cup semi frozen green peas
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1/2tsp lemon zest
- 1/2 tsp salt
- 1/4 tsp ground cumin
- pepper to taste
- Process all the ingredients in a food processor until the hummus has a consistency you like. You can thin it with more olive oil or a bit of water.
- Season and serve.

TIP Leave the peas frozen and keep the hummus cold longer. This is great both for the kids’ lunch box or if you are bringing hummus for a picnic.
