Bran Muffins With Pear

These muffins make a perfect snack between meals. We enjoy them for breakfast too sometimes. Fiber, essential omega fatty acids and fruits. What else do you want in a little tasty package?

  • 2 cups / 5 dl pastry flour
  • 1/4 cup / 60 ml ground flax seed
  • 1/4 cup / 60 ml wheat bran
  • 1/3 cup / 80 ml cane sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp gr. cinnamon
  • 1/4 tsp salt
  • 2 eggs
  • 4 oz / 110 gr melted butter
  • 3/4 cup milk / 180 ml milk
  • 2 pears, cored and diced
  • 1/2 cup / 120 ml walnuts, coarsely chopped
  1. Preheat oven to 400F/205C.
  2. Put all the dry ingredients in a big bowl and whisk together.
  3. Put all the wet ingredients in a smaller bowl and whisk them too.
  4. Add the wet to the dry and mix gently until almost completely combined, then add the pears and walnuts. Don’t overwork the batter.
  5. Divide the batter in the greased muffin pan and bake for 15-20 min.
