Bran Muffins With Pear
These muffins make a perfect snack between meals. We enjoy them for breakfast too sometimes. Fiber, essential omega fatty acids and fruits. What else do you want in a little tasty package?
- 2 cups / 5 dl pastry flour
- 1/4 cup / 60 ml ground flax seed
- 1/4 cup / 60 ml wheat bran
- 1/3 cup / 80 ml cane sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp gr. cinnamon
- 1/4 tsp salt
- 2 eggs
- 4 oz / 110 gr melted butter
- 3/4 cup milk / 180 ml milk
- 2 pears, cored and diced
- 1/2 cup / 120 ml walnuts, coarsely chopped
- Preheat oven to 400F/205C.
- Put all the dry ingredients in a big bowl and whisk together.
- Put all the wet ingredients in a smaller bowl and whisk them too.
- Add the wet to the dry and mix gently until almost completely combined, then add the pears and walnuts. Don’t overwork the batter.
- Divide the batter in the greased muffin pan and bake for 15-20 min.

Oooh, I remember having these! They are soooo yummy! I wonder if I can make them as good. I know the kids will LOVE these.
