Coconut Chips
I needed a topping for my chia/cashew breakfast today and looked around the kitchen, where my eyes landed on raw coconut flakes. I craved crunch and flavor.
Bring out a pan and add 1 tbsp coconut oil, 1 tbsp maple syrup and a generous handful of raw coconut flakes. Heat to high and stir constantly until the chips are golden brown. Finish with a pinch of salt. Cool on a plate. I got plenty of crunch and flavor!
Store in an airtight container at room temperature – if you have any leftovers. This is actually a great snack throughout the day…
