Nut-free-tella

Last night was one of those nights where I had a serious craving for chocolate and absolutely none in the house. Brushing my teeth didn’t seem to help, so I came up with this nut-free-tella and I was able to trick my body into thinking that this was in fact as good as smooth, rich dark chocolate. Dates are really underrated.

Special equipment: food processor

  • 8 medjool dates
  • 3 tbsp unsweetened cocoa powder
  • 3 tbsp water
  • 2 tbsp coconut oil
  • 2 tbsp agave nectar
  • 1 tbsp cocoa nibs
  • 1/2 tsp vanilla extract
  • pinch of salt
  1. Remove pits from dates and cut them into chunks.
  2. Put all the ingredients (except cocoa nibs) in the food processor and process until smooth. This may take a couple of minutes.
  3. Stir in the cocoa nibs
  4. That’s it. Store in the fridge for 1-2 weeks.

Makes about 1 cup / 2.5 dl

Suggestions

Try adding unsweetened shredded coconut. Make an orange version by using orange juice in place of the water and adding 1 tsp of orange zest in place of the vanilla.
