Nut-free-tella
Last night was one of those nights where I had a serious craving for chocolate and absolutely none in the house. Brushing my teeth didn’t seem to help, so I came up with this nut-free-tella and I was able to trick my body into thinking that this was in fact as good as smooth, rich dark chocolate. Dates are really underrated.
Special equipment: food processor
- 8 medjool dates
- 3 tbsp unsweetened cocoa powder
- 3 tbsp water
- 2 tbsp coconut oil
- 2 tbsp agave nectar
- 1 tbsp cocoa nibs
- 1/2 tsp vanilla extract
- pinch of salt
- Remove pits from dates and cut them into chunks.
- Put all the ingredients (except cocoa nibs) in the food processor and process until smooth. This may take a couple of minutes.
- Stir in the cocoa nibs
- That’s it. Store in the fridge for 1-2 weeks.
Makes about 1 cup / 2.5 dl
Suggestions
Try adding unsweetened shredded coconut. Make an orange version by using orange juice in place of the water and adding 1 tsp of orange zest in place of the vanilla.
