Green pea lemon hummus

My son is not a big fan of meat, chicken, fish nor cheese. So I have to be crative and come up with ways to get some protein in his growing body. That is how this hummus recipe was created. Special equipment: food processor

  • 1 can of garbanzo beans
  • 1/2 cup semi frozen green peas
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1/2tsp lemon zest
  • 1/2 tsp salt
  • 1/4 tsp ground cumin
  • pepper to taste
  1. Process all the ingredients in a food processor until the hummus has a consistency you like. You can thin it with more olive oil or a bit of water.
  2. Season and serve.

  • Cucumbers
  • Cherry tomatoes
  • Bell pebers
  • Zucchinis
  • Carrots
  • Broccoli florets
  • Cauliflower florets
  • Olives on toothpicks
  • Pita bread
  • Crackers
  • Bread sticks
  • Sandwich spread

TIP Leave the peas frozen and keep the hummus cold longer. This is great both for the kids’ lunch box or if you are bringing hummus for a picnic.
