Walnuts

I went to a Persian birthday party last week. All the food was delicious, but what really struck me was the freshness of the walnuts. They took me straight back to the big walnut tree in my grandmother’s backyard. I loved to pick the walnuts from the ground, crack them and eat them as fresh as they come. These tasted just like that. Later in the week, I learned something about walnuts. There is a trick. To make store-bought walnuts taste like they were just picked from the tree – simply soak them in water over night. Thank you, Ms Elaheh!

Oh, an important note. After soaking, drain well and eat all walnuts. They will not last more than a day after a good soaking. In other words, soak no more than you plan to serve.
